    可以叫做“花样年华”吗~~抹茶白巧克力慕斯for Eva

    北京下大雪的下午,我在做给Eva同学的生日蛋糕。寿星女钦点了抹茶巧克力白绿配以及上面的巧克力牌牌,我所做的发挥仅仅是在周围放了一圈装嫩的小粉花儿,哈哈!
    雪后的周一清晨阳光格外明媚,特地把蛋糕搬到朝南的阳台上去拍照,有阳光的感觉真好。只是这白绿粉的搭配,好像很春天的感觉,跟这个提前到来的寒冬有点不搭啊。

    白巧克力慕斯和抹茶都是以前做过的,配在一起还是第一次。特意减少了白巧层的分量,而且完全没有加糖,怕它太甜腻掩盖了抹茶淡淡的苦,结果吃起来感觉还不错!

    巧克力牌牌真费了劲了,天冷,巧克力变硬得太快,我调温又不够熟练,总之不是太软就是太硬,回炉了好多次,到深夜才勉强成功。用白色糖霜笔挤上歪歪扭扭的Happy Birthday字,可惜插在蛋糕上的时候排得太密,都看不清楚了。粉色的花很没技术含量的,买了即用的Gum Paste,调上色素擀平,用糖花模子刻出一个个小花再按上银珠就好了。

    半成品小花和日本代购来味道很好的抹茶粉合个影。

    分量为6寸圆模*1

    抹茶慕斯

    牛奶160g 抹茶粉7g 砂糖40g 鱼胶片1.5片 鲜奶油120ml

    -抹茶粉和细砂糖仔细混合均匀
    -牛奶小火加热到边缘气泡的程度,加入抹茶粉和砂糖,再加入泡软的鱼胶片,放凉
    -鲜奶油打发到浓稠可流动的程度,加入放凉开始变稠的抹茶牛奶拌匀即可

    白巧克力慕斯

    牛奶60g(加在一起刚好一袋的分量) 蛋黄1个 白巧克力50g 鲜奶油130ml 鱼胶片1片 香草荚1/2条(或香草精数滴)

    -鱼胶片泡冷水,白巧克力切小块,隔水加热融化
    -牛奶加入剖开的香草籽和香草荚煮开,再盖盖稍微闷一下
    -过滤掉香草荚,缓慢冲入蛋黄中搅匀,再倒回锅中小火加热至挂勺
    -加入泡软的鱼胶片搅拌至融化,再与融化的白巧克力拌匀,放凉
    -鲜奶油打发,与巧克力糊拌匀即可

    蛋糕层用了2蛋的分蛋海绵,6寸两层。因为颜色和白巧层差不多,上面一层在照片上都看不出来了。
