    芒果慕斯蛋糕

    从外形到味道都比较成功的慕斯蛋糕,用了自己摸索出来的方子,一定要记下来:)

    蛋糕底
    6寸戚风切3片,实用2片

    慕斯馅
    材料:芒果肉180g(打成果泥)+约1/2个(切粒) 动物性鲜奶油100g 酸奶1小杯(125g) 白糖50g 吉利丁片2片 蛋黄1个
    做法:
    1.芒果肉打成果泥,加入糖,放锅中小火加热搅拌至糖完全融化,关火;
    2.加入蛋黄,再加入泡软的吉利丁片,搅拌至吉利丁片融化;
    3.隔冰水冷却,凉后加入酸奶和打发的奶油,混合均匀即可。

    模子底部放一片蛋糕,倒入慕斯馅,加上切粒的果肉,盖上切小一圈的另一片蛋糕,最后将剩下的慕斯馅全部倒入,冰箱冷藏过夜即可。

    Remarks:
    1.因为不想再在这么热的天打发奶油,所以买了铁罐装的爱护喷射奶油。用起来很像摩丝,刚出来的时候效果还不错,不过室温稍微多放一会儿就软了。做慕斯是没问题,裱花还不够理想;
    2.甜度适中,糖的分量甚至还可以再少,因为喷射奶油是含糖的(如果用淡奶油就不要再减糖了),而且用的那几个芒果都非常非常甜;
    3.2片吉利丁,对于这个6寸的慕斯蛋糕,非常合适。口感终于符合我一直以来的期望了。

    装饰层
    1/2个芒果肉加少许水打成很浓稠的果汁(最好过滤一下),小火加热;吉利丁0.5片泡软,加入芒果汁中搅拌。冰水降温。
    冷却后的芒果汁倒在已经冷却隔夜的慕斯表面,抹平,放上装饰用的果肉、银珠糖,冰箱冷藏约半小时,表层凝固即可脱模取出。
