    抹茶红豆慕斯蛋糕

    之前做过同样名字的,在 这里
    内容其实有点不一样,上次的是抹茶蛋糕体加红豆慕斯,
    这次是原味蛋糕体,加红豆和抹茶双层慕斯。
     
     
    蛋糕不说了,做惯了的戚风坯子。只是是又放错了油,同学们千万记住啊,放色拉油,或是其他没有味道的油,一定不要放花生油。。。虽然我发现之后就多加了柠檬汁和Rum想要亡羊补牢,但当蛋糕入炉飘出一屋子花生香味时,我还是郁闷得想撞墙。(其实真的放错了,也没有那……么严重啦,就是会吃出花生油香味儿……要是不说可能别人会以为本来就该这样的)
     
    红豆慕斯层
     
    蜜红豆150g 牛奶30g 动物性鲜奶油120g 鱼胶片1片
    鱼胶片冷水泡软,牛奶稍微加热,将鱼胶片放入搅拌至完全融化;
    蜜红豆用搅拌机打成泥,加上牛奶拌匀(时间关系,用了超市买的蜜红豆。还是自己做的更好些,买来的成品实在太甜了);
    鲜奶油打至浓稠仍可流动状,加入上料拌匀即可。
     
    6寸模子里放入一片蛋糕片做底,倒入红豆慕斯,再放入第二片蛋糕片,调整到蛋糕刚好没进去一半高度,放进冰箱冷藏,再开始准备下一层慕斯(目的是使上下层能够明显分开,不会融合到一起)。
     
    抹茶慕斯层
     
    抹茶粉10g 牛奶120g 蛋黄1个 糖30g 动物性鲜奶油120g 鱼胶片1片
    鱼胶片冷水泡软;
    牛奶小火加热至微沸,离火,缓慢冲进蛋黄中拌匀,再将混合物倒回锅中加热至沸腾;
    将鱼胶片加入搅拌至融化,再加入抹茶粉仔细拌匀;
    鲜奶油加糖打发同上,加入抹茶牛奶液拌匀。
     
    此时上一层慕斯应该已经基本固定了,倒入第二层,放回冰箱冷藏至凝固。
    切开的照片,上下两层分得还不错哈。
     
     
     
    用了一点绿茶粉和镜面果胶调匀抹在表面,然后放了Jenny's买来的速冻树莓做装饰。 
     
     
    *以上分量刚好装满一个6寸活底圆模(蛋糕体切3片用2片)。

    妖精七七,说实在的,如果怕肥,我会建议你做其它没这么高脂的甜品,或者可少吃点,少做点。如果为了降低热量减少配方里的糖、油脂什么的,它就不是它了……

    没有问题的,老师每次都是用活底模做的,怕流出来的话底层蛋糕不要去边就好啦,然后底下再垫个盘子呗。
    其实不太会流出来,因为慕斯馅并不会那么稀(因为有打发的奶油啊固体材料啊什么的),如果真的很稀,你可以等到鱼胶片开始发挥作用,馅料变得浓稠的时候才倒进去。
